Equipment

  • Mixing bowl
  • Pastry mat
  • Rolling pin
  • Pizza pan (we use a 12-inch cast-iron skillet)
  • Pizza cutter

Ingredients

  • 1 cup nonfat Greek yogurt
  • 1 cup unbleached white flour
  • 2 tsp baking powder
  • 3/4 tsp salt
  • extra flour, for rolling
  • 1 tsp olive oil, for brushing on the pan
  • 1 Tbsp active or discard sourdough starter* * optional. If you don't have this, don't worry!
  • 1 tsp Italian seasoning or garlic powder (optional)

Instructions

  • Preheat oven to 425 degrees.
  • Mix the flour, baking powder, salt, and yogurt (and sourdough starter, if using) by hand in a bowl until combined.
  • Turn the mixture onto a lightly floured pastry mat, and roll into a 12-inch round.
  • Lightly brush the surface of your pizza pan or cast-iron skillet with olive oil.
  • Gently place your rolled out dough into the lightly oiled skillet.
  • Put into preheated oven WITHOUT toppings on for 10 minutes.
  • Remove from oven, and top with sauce and other ingredients (except cheese.) Bake for 10-15 more minutes (this may vary depending on your oven and toppings used.)
  • When the crust is fully browned and crispy on the bottom and pizza appears done, turn the oven off. Add cheese and put back in the oven for another 1-3 minutes until the cheese is fully melted.
  • Remove from oven, cut and enjoy!

Notes

I have sourdough starter in my refrigerator, so we usually put a tablespoon of it in this dough. This is NOT a required ingredient - if you don't have it, you will still love this recipe. We think the sourdough starter gives it just a bit of extra flavor and also some extra crispiness.
